Gipu's Sierra Leonean Groundnut stew
6 full tbs groundnut or peanut paste (or peanut butter) mix with water and stir to liquid
2 tbs tomato paste
2 maggi cubes
1 kg chicken diced
seasoning for the chicken: black pepper, garlic minced, cayen pepper, crushed red pepper flakes, salt
1 big onion
season the chicken and boil it in water, then put the onion to boil for a few minutes, then salt, maggi cubes, stir and leave it to boil for 2-3 minutes, then put the groundnut and tomato paste to boil 5 minutes, then the vegetables. stir and leave to boil until the vegetables are cooked.
serve with steamed rice.
